Preserving Fall for Winter

On Saturday I made 2 batches of Mustard Pickles.

Last week I bought a bag of squash, 13 buttercup squash.
Emma and I had one for supper on Sunday....yummy

Today I started to put some away for winter.
I did 4 squash this morning...it took me 50 minutes to peel them....(hard on the hands)

....cooked them ( 2 pots)

....mashed them and let them cool

...and then bag them into individual servings (Paul doesn't eat squash);
4 bags /2 squash. At this rate I'll have plenty for the winter. I'll share with Emma ,
because she likes it as well.

I will put a recipe for "Pumpkin Soup" on my blog. Pumpkin in Australia is known as squash...I have perfected the recipe Jeff says...in actual fact it changes everytime I make it!
